Carrot and Mint Salad Recipe

Ingredients

  • 2 large carrots
  • 200 ml iced water
  • 60 ml lemon juice
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1 tbsp chopped fresh mint

    Method

    Pare the carrots into thin strips. Combine them with iced water, lemon juice, sugar and salt. Cover and chill for 2 hours. Just before serving, drain carrots. Combine with mint, mix gently and serve.
