Chukunder and Rajmah Salad Recipe

Ingredients

  • 1/2 kg cooked beetroot
  • 150 gm cooked kidney beans
  • 1/2 small red cabbage - shredded
  • 2 tbsp pickled onions
  • 2 tomatoes - shredded
  • 2 oranges - segmented
  • 2 hardboiled eggs - chopped

Dressing
  • 1 tbsp spring onion paste
  • 6 tbsp salad/ olive oil
  • 4 tbsp lemon juice
  • 1 tbsp prepared mustard
  • 2 green chillies- chopped
  • 2 tbsp chopped coriander
  • 2 tsp chopped garlic
  • 1 tsp oregano
  • salt and pepper

    Method

    Peel beetroot and chunk into a bowl. Stir in remaining salad ingredients. Whisk together dressing ingredients. Pour over salad. Set aside for 1 hour. Before serving, scatter hardboiled egg over the salad.
