Aubergine Salad (Baingan ka Salaad) Recipe

Ingredients

  • 250 gm long aubergines
  • 1 tbsp oil
  • 1 tbsp coarsely chopped garlic
  • 1 tomato - peeled, deseeded and diced
  • 2 tbsp lime juice
  • 1 tsp grated jaggery
  • 2 tbsp fish sauce
  • 1 hard boiled egg - chopped
  • 2 onions - sliced into rings
  • 2 sliced green chillies
  • coriander leaves to garnish

For onion bread
  • 1 tsp browned onion paste
  • 2 tbsp butter
  • coarsely ground black pepper
  • 1/2 tsp paprika
  • 6 slices of crisp bread
  • sprinkling of crushed rock salt
