Dried Bean Salad (Rajmah Salad) Recipe

Ingredients

  • 200 gm assorted dried beans
  • 2 segmented sweet limes
  • 1 shredded capsicum
  • 2 shredded tomatoes
  • 2 sliced onions

Dressing
  • 1 pureed raw mango
  • 4 tbsp salad/olive oil
  • 1-2 tbsp honey
  • 4 tbsp chopped coriander
  • 2 chopped green chillies
  • salt and pepper to taste

    Method

    Cook the beans in boiling water until tender. Toss the cooked beans and sweet lime in a bowl. Combine all the dressing ingredients. Whisk and season well. Pour the dressing on the salad and let it chill in the fridge overnight. Add tomatoes, capsicum and seasoning before serving. Garnish with onion rings.
