Sutafreni Delight

Ingredients

  • 250 g X 2 sutaferni, with or without saffron
  • 1 cup paneer, grated
  • 1/2 cup icing sugar,sieved
  • 1 tsp corn flour
  • 1/2 cup fruit of your choice
  • chopped fresh fruits( pineapple, orange, mango chopped mixed with dry fruits)
  • 1/4 cup sugar syrup
For the garnish
  • a few rose petals and fruit slices

    Method

    In a medium sized bowl, place the paneer, icing sugar and corn flour and mix well. Add the finely chopped fruits. Place one of the sutarfeni bands on a lighly greased baking tray and heat slighly in a moderately heated oven, just enough to make it a little crisp. Remove from the oven and allow to cool slighly. Place the sutarfeni on serving dish and spread the cottage cheese mixture over this evenly. Make the other sutarfeni slighly crisp in the oven and place that over the cheese mixture. Pour sugar syrup over the sutarfeni, making sure it does no leak form the sides. Garnish with the rose petals and fruits slices. Cut into triangles and server.
